Top New York Chef Joins Fluke


Neil Manacle, a tall, engaging Chef de Cuisine, was in consultation with Jeff Callaghan, owner of Fluke Wine Bar and Restaurant on Bowen’s Wharf when NewportSeen arrived. “Should we change the menu here?” Callaghan asked the new chef. The menu is constantly changing at Fluke as seasonal produce arrives, and Chef Neil creates simple, flavorful dishes with bright and bold flavors.


The story of Mr. Manacle’s career change from New York City bus driver to professional chef, came as no surprise to his family, a large Irish clan that gathered for Sunday dinners at his grandfather’s apartment, where all the men took over the kitchen. In spite of his interest in food preparation he followed his father and two uncles, and became a bus driver for four years. He decided that it was not his true profession, and enrolled in Johnson & Wales.


His first jobs were in Rhode Island, at Frederick’s, and at the Pawtucket Country Club. After that, he moved back to New York, and was hired by Bobby Flay, the award-winning chef, cookbook author, and Food Network personality, for his landmark Manhattan restaurant, Mesa Grill. He moved on to Bolo and then Bar Americain, where he became Chef de Cuisine. “Bobby gave me opportunities,” he said. Neil was a top chef in New York for 18 years.


“I like big, bright flavors, and will create for Fluke patrons Mediterranean style salads and vinaigrettes for the summer using local produce,” he explained. The menu will change every couple of weeks, but will not rely on heavy sauces. “I let the ingredients speak for themselves.”


Jeff Callaghan’s and Neil’s paths had previously crossed in New York, when Jeff sold wine to Mesa Grill. They were delighted to meet again, and now be working together in Newport. Jerri Banks, the creator of the drinks menu, has special cocktails and drinks that have earned the restaurant kudos for Best Cocktail Menu from Newport Life magazine for two years in a row.

Geremie Callaghan, co-owner, said that there will be live jazz at Fluke, sponsored by Louis Roederer Champagne, later this summer.
